PASTA WITH ASPARAGUS AND SPRING ONION



INGREDIENTS:

1/2 pound of your favorite pasta
5 garlic cloves, crush and chopped
1/4 cup of olive oil
1 pound fresh asparagus, cut into 1 inch pieces
4-5 spring onions, cut into 1/2-inch pieces
1 tablespoon of butter or one egg yolk or both
Freshly grated Parmesan or Pecorino
Salt and pepper to taste

DIRECTIONS:

  Boil water for the pasta. Cook as you are preparing the asparagus.

  In a skillet, sauté the garlic, spring onion and then asparagus. It takes only 5-6 minutes to cook the vegetables.

Add the hot pasta and a spoonful of the pasta sauce along with the butter and/or egg yolk, perhaps a spot of cream. Top with shaved Parmesan.
